Freezing
The selected food ingredient is rapidly frozen at controlled temperatures. This converts the moisture present in the product into ice.
Vacuum Drying & Sublimation
The frozen product is placed under controlled vacuum conditions. The ice changes directly from a solid state into vapour without passing through the liquid stage. This process is known as sublimation.
Moisture Removal
As the ice is converted into vapour, moisture is gradually removed from the product under carefully controlled conditions. This results in a lightweight, dry product.
Final Product
Once the required moisture level is achieved, the product retains much of its original structure, flavour, colour and aroma while becoming significantly lighter and easier to store and transport.
Packaging
The finished freeze-dried product is carefully packed in suitable moisture-barrier packaging to help protect its quality and maintain shelf stability.

How Freeze-Drying Works

Preparation
Fresh ingredients are carefully selected, cleaned and prepared according to the required product specifications. Depending on the ingredient, this may include sorting, trimming, slicing or cutting.
Controlled Heating & Airflow
The prepared ingredients are exposed to controlled temperature and airflow. The drying conditions are carefully managed according to the type and characteristics of the product.
Moisture Removal
Warm, controlled air gradually removes moisture from the ingredients. The drying process continues until the desired moisture level is achieved.
Cooling
Once drying is complete, the products are carefully cooled under controlled conditions. This helps prepare them for handling and packaging.
Packaging
The finished air-dried products are packed in suitable packaging designed to protect them from moisture and maintain their quality during storage and transportation.
